WINE MAKING | The Chardonnay of the young Tenuta Volpare winery is a fresh and balanced interpretation that originates in Oltrecastello, a hamlet in the municipality of Trento. The estate applies the principles of certified organic farming in order to safeguard the health of the environment and biodiversity. The health of the grapes is favoured by the correct exposure and orientation of the rows, as well as by rational agronomic practices aimed at decreasing the humidity around the bunches while encouraging optimal ripening. In the cellar, on the other hand, efforts are made to support the quality of the grapes and the expression of the terroir by adopting a non-invasive oenology. Tenuta Volpare Chardonnay originates exclusively from grapes of the Burgundy grape variety of the same name grown on the hills east of Trento, at an altitude of 540 metres above sea level. The vines, planted in 2011 with full southern exposure, are organically certified and grown on clay-limestone soils. Harvesting is carried out by hand, seeking good phenolic ripeness of the grapes, which are then brought to the cellar and gently pressed. The must obtained in this way undergoes alcoholic and malolactic fermentation in stainless steel tanks, the same type of wine container where maturation takes place for a few months prior to final bottling, carried out with minimal additions of sulphur dioxide. Tenuta Volpare's Chardonnay has a straw yellow colour with brilliant hues. The nose proposes delicate aromas of wild flowers and fresh white-fleshed fruit, followed by a light and pleasant saline reminiscence. Fresh, balanced and pleasantly fruity on the palate, characterised by a delicate mineral accent on the finish. |

Tenuta Volpare
Modern oenological technique to allow the wine to best express the territory from which it comes, the vintage and the varietal characteristics.
Between viticulture and oenology the important part is played by viticulture and the creation of wine in the vineyard with natural techniques in balance with the environment.

Trentino-Alto Adige
Trentino Alto Adige is comprised of two provinces, with Alto Adige in the north around Bolzano, and Trentino around the city of Trento in the south. Historical and cultural differences distinguish the two provinces – Trentino is classically Italian whereas Alto Adige is known as Südtirol to its largely German-speaking population. The terrain is mountainous, with the Dolomites and Rhaetian Alps enveloping the area, so viticulture is simply not possible on much of the land. However it is practiced on many steep slopes under difficult conditions. Like many of the world’s wines that are the most challenging to make, there is a real emphasis on quality that makes it worth persisting with the complexities of the region’s terrain and climate.
Chardonnay is important, along with Sauvignon Blanc, Pinot Grigio and Pinot Blanc. Red grapes like Schiava (also known as Vernatsch) are used to make the classic red of Bolzano, known as St Magdalener. The wine is light and elegant with a lovely red fruit character. The most important red grape of Alto Adige in terms of quality is the Lagrein. Some excellent reds from Cabernet Sauvignon, Merlot and Pinot Nero are showing that the region’s wines are worthy of the attention of the international market, not just in the neighbouring countries, but making an impact further afield as well.
